  • 1 medium Pumpkin peeled and cubed
  • 1 Onion chopped
  • 2 cloves Garlic minced
  • 1 inch Ginger grated
  • 2 Tomatoes chopped
Spices
  • 1 teaspoon Cumin Seeds
  • 1 teaspoon Coriander Powder
  • 1 teaspoon Turmeric Powder
  • 1 teaspoon Garam Masala
  • 1 teaspoon Chili Powder adjust to taste
Liquids
  • 1 cup Coconut Milk
  • 1 cup Vegetable Broth
Other
  • 2 tablespoons Oil for cooking
  • to taste Salt
  • fresh cilantro for garnish

Method
 

Cooking Steps
  1. Heat oil in a large pot over medium heat.
  2. Add cumin seeds and let them sizzle.
  3. Add chopped onions, garlic, and ginger; sauté until translucent.
  4. Stir in the chopped tomatoes and cook until softened.
  5. Add the pumpkin cubes and spices; mix well.
  6. Pour in coconut milk and vegetable broth; bring to a boil.
  7. Reduce heat and simmer until pumpkin is tender, about 20 minutes.
  8. Adjust seasoning with salt to taste.
  9. Garnish with fresh cilantro before serving.
