Step-by-Step Instructions
  1. Butterfly the chicken breasts into thin cutlets for even cooking, season with kosher salt and black pepper.
  2. Create a dredging station with flour in one bowl, beaten eggs in another, and panko mixture in a third bowl.
  3. Coat each cutlet first in flour, then egg, and finally panko mixture, pressing gently for an even coating.
  4. Preheat your air fryer to 400°F (200°C) for about 5 minutes. Arrange the coated chicken in a single layer.
  5. Place the cutlets in the basket and cook for 5 minutes, flip and cook for another 5 minutes until crispy.
  6. Top each piece with marinara sauce and shredded mozzarella, return to the air fryer for 3 minutes.
  7. Remove from air fryer and garnish with fresh parsley before serving.
