- Preheat your oven to 350°F (175°C) and lightly grease a 9.5x5 inch loaf pan.
- In a skillet, heat vegetable oil and sauté diced onions until translucent (about 10 minutes).
- Add minced garlic and cook for 2 more minutes, then remove from heat and cool.
- In a bowl, combine the cooled onion-garlic mixture with an egg, gochujang, and salt.
- In a large bowl, mix ground pork and panko crumbs, then fold in the binder mixture gently.
- Shape the mixture into the loaf pan; ensure it's evenly packed.
- Bake in the oven for about 40 minutes, until the internal temperature reaches 140°F (60°C).
- Prepare the glaze by mixing apricot jam, gochujang, honey, sesame oil, garlic powder, soy sauce, and vinegar.
- After 40 minutes, glaze the meatloaf and return it to the oven for another 10-15 minutes until it reaches 160°F (71°C).
- Let the meatloaf rest for 5 minutes before slicing and serving warm.
