Ingredients
  

For the Meatloaf
  • 1 lb Ground Pork 80/20 or 85/15 fat content
  • 2 tbsp Gochujang or other chili paste
  • 1 cup Panko Bread Crumbs
  • 3 cloves Garlic freshly minced
  • 1 medium Onion
  • 2 stab Green Onions whites and greens kept separate
  • 1 large Eggs room temperature
For the Glaze
  • 1/2 cup Apricot Jam or other fruit jam
  • 1 tbsp Honey
  • 2 tbsp Sesame Oil or olive oil
  • 1 tbsp Soy Sauce or Tamari
  • 1 tbsp Rice Wine Vinegar or apple cider vinegar

Method
 

Cooking Steps
  1. Preheat your oven to 350°F (175°C) and lightly grease a 9.5x5 inch loaf pan.
  2. In a skillet, heat vegetable oil and sauté diced onions until translucent (about 10 minutes).
  3. Add minced garlic and cook for 2 more minutes, then remove from heat and cool.
  4. In a bowl, combine the cooled onion-garlic mixture with an egg, gochujang, and salt.
  5. In a large bowl, mix ground pork and panko crumbs, then fold in the binder mixture gently.
  6. Shape the mixture into the loaf pan; ensure it's evenly packed.
  7. Bake in the oven for about 40 minutes, until the internal temperature reaches 140°F (60°C).
  8. Prepare the glaze by mixing apricot jam, gochujang, honey, sesame oil, garlic powder, soy sauce, and vinegar.
  9. After 40 minutes, glaze the meatloaf and return it to the oven for another 10-15 minutes until it reaches 160°F (71°C).
  10. Let the meatloaf rest for 5 minutes before slicing and serving warm.
