Preparation Steps
  1. Preheat your oven to 200°C (392°F). Clean and dry the small cooking potatoes thoroughly, leaving the skin on for added flavor and texture.
  2. Slice each potato thinly, about 1/4 inch apart, being careful not to cut all the way through.
  3. In a bowl, mix the oil, melted butter, sweet paprika, garlic powder, herbs, salt, and pepper. Coat each potato generously with this mixture.
  4. Place each seasoned potato on a square of aluminum foil, fold the foil around them to create a 'boat', and arrange them on a baking sheet.
  5. Bake for 55-65 minutes until done; check with a fork.
  6. Cook bacon in a skillet until crispy, about 5-7 minutes, then transfer to paper towels to drain.
  7. After the potatoes are soft, sprinkle cheese on top and return to the oven for an additional 7-10 minutes until melted.
  8. Top each potato with crispy bacon, chives, and sour cream before serving.
