  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Slice the head of cabbage into ¾ to 1-inch thick steaks, keeping the core intact. Arrange them on the baking sheet.
  3. Whisk together olive oil, balsamic vinegar, agave, garlic powder, oregano, salt, and black pepper in a mixing bowl.
  4. Generously apply the balsamic glaze to both sides of each cabbage steak.
  5. Roast the cabbage steaks in the oven for 25-30 minutes, flipping halfway through.
  6. Serve warm, garnished with fresh parsley or dill if desired.
