- Cook rotini pasta in salted boiling water until al dente, about 8-10 minutes. Drain and rinse with cold water; let cool.
- Prepare vegetables: dice jalapeño, chop tomatoes, red bell pepper, and finely dice onion. Shred cheddar cheese.
- In a skillet, brown the ground beef over medium-high heat for 8-10 minutes. Drain fat, add taco seasoning, and mix until coated.
- In a large bowl, combine cooled pasta, seasoned beef, vegetables, corn, black beans, and cheddar cheese. Mix well.
- Pour Catalina dressing over the salad mixture and toss to combine. Adjust dressing to taste.
- Right before serving, add crushed Doritos on top and fold gently. Optional: serve over iceberg lettuce.
