Cooking Steps
- Heat a skillet over medium heat, add the cooked breakfast sausage or crumbled bacon, and sauté until browned and crispy, about 5 minutes.
- In a mixing bowl, whisk together 4 large eggs with a pinch of salt and pepper. Melt 1 tbsp of unsalted butter in the skillet, then pour in the eggs, gently stirring until fluffy.
- Warm another skillet over medium heat. Brush 8 tortillas with 1 tsp vegetable oil, cooking for about 30 seconds on each side until pliable.
- Remove the eggs from heat just before fully cooked. Place shredded cheese on warm tortillas to melt, then add scrambled eggs and cooked sausage or bacon.
