  • 4 large eggs Whisk until lightly blended for fluffiness.
  • 1 tbsp unsalted butter Substitute with olive oil for a dairy-free version.
  • 1/2 cup shredded cheddar or Monterey Jack cheese Opt for dairy-free cheese as an alternative.
  • 1/2 lb breakfast sausage or bacon, cooked and crumbled Swap for sautéed mushrooms for a vegetarian option.
  • salt & black pepper Adjust to taste.
For the Tortillas
  • 8 small corn or flour tortillas (approx. 6 inches) Use corn tortillas for a gluten-free option.
  • 1 tsp vegetable oil Can be replaced with olive oil or omitted if using a non-stick skillet.
For the Toppings
  • 1/2 cup fresh salsa or pico de gallo Homemade or store-bought works beautifully.
  • 1 medium avocado Sliced or mashed; guacamole can also be used.
  • 2 tbsp fresh cilantro, chopped Feel free to skip if you don't prefer cilantro.
  • 1 tbsp lime juice Substitute with lemon juice for a different twist.

Method
 

Cooking Steps
  1. Heat a skillet over medium heat, add the cooked breakfast sausage or crumbled bacon, and sauté until browned and crispy, about 5 minutes.
  2. In a mixing bowl, whisk together 4 large eggs with a pinch of salt and pepper. Melt 1 tbsp of unsalted butter in the skillet, then pour in the eggs, gently stirring until fluffy.
  3. Warm another skillet over medium heat. Brush 8 tortillas with 1 tsp vegetable oil, cooking for about 30 seconds on each side until pliable.
  4. Remove the eggs from heat just before fully cooked. Place shredded cheese on warm tortillas to melt, then add scrambled eggs and cooked sausage or bacon.
  5. Top with avocado, salsa, cilantro, and lime juice before serving warm.
