- In a medium bowl, combine diced tomatoes, minced garlic, balsamic vinegar, olive oil, salt, pepper, Italian seasoning, and chopped basil. Mix well and let sit for about 10 minutes.
- While the topping is resting, season chicken with salt, pepper, garlic powder, and paprika. Heat 1 tablespoon of olive oil in a skillet over medium-high heat and sauté the chicken for 4-5 minutes on each side.
- In a pot, bring salted water to a boil. Add pasta and cook according to package instructions until al dente, about 8-10 minutes. Drain and return to pot with a drizzle of olive oil.
- In the skillet used for chicken, combine pasta with sliced chicken and bruschetta topping. Toss over low heat for 2-3 minutes.
