  • 1 cup mini bocconcini halved; swap for grated Parmigiano-Reggiano
  • 1/2 cup fresh basil leaves chopped; can alternate with parsley or oregano
  • 1/4 cup olive oil or use avocado oil as a lighter option
  • 2 tbsp red wine vinegar can use balsamic vinegar for a sweeter profile
  • 1 tsp salt adjust to taste
  • 1/2 tsp pepper adjust to taste
For Crunchy Topping (Optional)
  • 2 slices sourdough bread for breadcrumbs; any bread can be used

Method
 

Preparation Steps
  1. Cook the Pasta by boiling salted water, adding pasta, and cooking until al dente for 8-10 minutes.
  2. Prepare the Salad Ingredients by combining tomatoes, garlic, shallot, bocconcini, olive oil, vinegar, basil, salt, and pepper in a bowl.
  3. Make the Crunchy Breadcrumbs by toasting bread, crumbling it, and sautéing with olive oil and garlic powder until golden.
  4. Combine All Ingredients by mixing cooled pasta with salad mixture and adding toasted breadcrumbs if desired.
  5. Chill and Serve, letting the salad rest for at least 10 minutes before serving chilled or at room temperature.
