Step-by-Step Instructions
  1. Prepare the carrots by shredding fresh carrots using a food processor or box grater, aiming for about one cup of finely shredded carrots.
  2. In a large mixing bowl, combine the shredded carrots with oats, raisins, walnuts, and cinnamon. Stir until well mixed.
  3. Add creamy nut butter, maple syrup, and vanilla extract to the dry mixture. Fold gently to combine.
  4. Cover the mixing bowl and refrigerate for about 30 minutes to firm up the mixture.
  5. Roll tablespoon-sized amounts of the mixture into balls approximately 1 to 1.5 inches in diameter.
  6. Transfer rolled energy balls into an airtight container and store in the fridge for up to a week or freeze for up to three months.
