Steps for Preparation
  1. Start by washing and peeling 3-4 fresh, firm carrots. Slice them into thin ribbons using a vegetable peeler. Set aside in a large mixing bowl.
  2. In a small bowl, whisk together 3 tablespoons of soy sauce, 2 tablespoons of rice vinegar, and the juice of half a lime. Add 1 tablespoon of maple syrup, 1 tablespoon of sesame oil, 1 clove of minced garlic, and 1 teaspoon of grated ginger. Whisk until smooth.
  3. Pour the dressing over the carrot ribbons and gently toss to coat. Let them marinate for a couple of minutes.
  4. Transfer the salad to a serving dish, sprinkle with toasted sesame seeds and chopped cilantro. Serve immediately.
