- In a large skillet, heat over medium-high heat and add the ground beef, cooking for 5–7 minutes until browned and crumbly.
- Carefully drain any excess fat. Add diced onions to the skillet and cook for 2–3 minutes until they turn translucent.
- Stir in the tomato sauce and diced tomatoes, followed by the Italian seasoning, salt, and pepper. Simmer for about 5 minutes.
- Bring a pot of water to a boil. Add the elbow macaroni and cook until al dente, about 7–9 minutes. Drain and set aside.
- In a large bowl, combine the drained macaroni, beef mixture, cheddar cheese, mozzarella cheese, and sour cream. Stir until well mixed.
- Preheat your oven to 375°F (190°C). Grease a baking dish and layer half of the mixture, sprinkle cheddar cheese, then add the remaining mixture.
