Step-by-Step Instructions for Cheesy Rotel Beef Tacos
  1. Sauté the onions in olive oil over medium heat until translucent and fragrant, about 4-5 minutes.
  2. Add the ground beef, breaking it apart and cooking until browned, about 6-8 minutes; season with taco seasoning.
  3. In a separate saucepan, melt unsalted butter and whisk in all-purpose flour to create a roux, cooking for about 1 minute.
  4. Gradually whisk in whole milk and cook until thickened, about 4-6 minutes.
  5. Stir in the undrained Rotel and shredded cheddar cheese until melted and smooth.
