For the Sauté

  • 1 medium Zucchini Diced.
  • 1 cup Cherry Tomatoes Halved.
  • 3 cloves Garlic Minced.
For Seasoning
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Dried Basil
  • to taste Salt
  • to taste Pepper
For Garnish
  • 2 tablespoons Fresh Parsley Chopped.
  • 1/4 cup Grated Parmesan Cheese Optional.

Method
 

Step-by-Step Instructions
  1. Bring a large pot of salted water to a rolling boil. Add pasta and cook according to package instructions until al dente, about 8-10 minutes. Drain and set aside.
  2. In a large skillet over medium heat, drizzle olive oil. Once shimmering, add sliced chicken sausages and sauté for 5-7 minutes until browned and cooked through. Set aside.
  3. In the same skillet, add diced zucchini and sauté for 3-4 minutes until slightly softened and caramelized.
  4. Add minced garlic and halved cherry tomatoes to the skillet. Cook for an additional 3-5 minutes until tomatoes burst and release juices.
  5. Sprinkle in dried oregano and basil, season with salt and pepper, and stir for about a minute to infuse flavors.
  6. Return drained pasta and sautéed sausages to the skillet. Toss gently for a few minutes over medium heat until everything is well combined.
  7. Heat through for another 2-3 minutes, stirring occasionally to meld flavors without overcooking pasta.
  8. Remove from heat and garnish with chopped parsley. Serve with grated Parmesan cheese on the side if desired.
