  • 1/2 cup Mayonnaise Can use Greek yogurt

  • 2 cloves Grated Garlic
For Assembly
  • 1 cup Diced Tomatoes Can replace with pico de gallo
  • 2 cups Fresh Greens Spinach or arugula

Preparation Steps
  1. Prepare the Marinade: In a medium bowl, whisk together olive oil, minced garlic, chopped fresh parsley, red wine vinegar, salt, and pepper. Marinade chicken breasts for at least 30 minutes or overnight.
  2. Make the Chimichurri Sauce: Pulse together fresh parsley, garlic, red pepper flakes, red wine vinegar, and olive oil in a food processor until chunky. Set aside.
  3. Prepare the Creamy Garlic Sauce: Mix mayonnaise, sour cream, lemon juice, and grated garlic in a bowl. Stir until smooth and creamy. Chill in the fridge.
  4. Preheat the Grill: Heat your grill to medium-high, about 400°F to 450°F (200°C to 230°C).
  5. Grill the Chicken: Grill chicken breasts for about 5-7 minutes each side until the internal temperature is 165°F (75°C). Let it rest for 5 minutes.
  6. Assemble Your Bowl: Layer fresh greens in a bowl, top with sliced grilled chicken, drizzle with chimichurri sauce, and add diced tomatoes and creamy garlic sauce.
  7. Serve and Enjoy: Enjoy immediately or store components separately for meal prep.
