Step-by-Step Instructions
  1. In a food processor, combine pitted Medjool dates, raw cashews, unsweetened shredded coconut, unsweetened cocoa powder, vanilla extract, peppermint extract, and a pinch of salt. Pulse until sticky and holds together.
  2. If the mixture is too crumbly, add water slowly, one teaspoon at a time, while pulsing until you reach the desired consistency.
  3. Scoop out the mixture and roll it into 1-inch balls. Place on a parchment-lined tray with space between each.
  4. Optionally, melt chocolate chips and coconut oil for a drizzle over the bites for added sweetness.
  5. Chill the bites in the refrigerator for at least 30 minutes before enjoying.
