Dressing Preparation
- In a medium bowl, whisk together tahini, dairy-free yogurt, lemon juice, nutritional yeast, dill, garlic powder, onion powder, parsley, and a pinch of salt. Add cold water if too thick to achieve desired consistency.
Smart Bacon Cooking
- Cook Smart Bacon in a skillet over medium heat for 4-5 minutes until crispy. Transfer to a paper towel-lined plate.
Filling Preparation
- Layer fresh lettuce, tomato, sliced onion, pickled jalapenos, and chickpeas. Sprinkle with salt and pepper, then drizzle with half of the tahini ranch dressing.
Chop and Mix
- Chop filling ingredients into small pieces. Transfer to a large bowl and mix well with remaining tahini ranch dressing.
Sandwich Assembly
- Place a generous portion of the filling on the bottom half of your preferred bread or roll. Drizzle additional dressing, add Smart Bacon, and place the top half.
