Step-by-Step Instructions
  1. In a large pot, heat 2 tablespoons of neutral oil over medium heat. Add diced onion and sauté for 5-8 minutes, until translucent.
  2. Stir in diced celery, minced garlic, fresh thyme, and bay leaves. Cook for an additional 2 minutes.
  3. Add rinsed green split peas and vegetable broth, bring to a boil, then cover and reduce heat to simmer for 20-25 minutes.
  4. Introduce cubed potatoes and diced carrots, pour in liquid smoke, and continue cooking uncovered for another 20-25 minutes.
  5. Check consistency and add water if it's too thick. Adjust seasoning with salt and pepper before serving.
