Step-by-Step Instructions
  1. Finely chop the garlic and ginger, and press the firm tofu beforehand.
  2. In a large pot, heat oil over medium heat. Add garlic and ginger, sauté for 2 minutes until fragrant.
  3. Pour in vegetable broth, bring to a simmer, and whisk in miso paste until dissolved. Let it simmer for 5 minutes.
  4. Fold in cubed tofu and soy sauce; simmer for another 5 minutes, allowing flavors to meld.
  5. Stir in sliced scallions and optional seaweed for an additional minute before serving.
  6. Ladle into bowls, garnish with scallions or sesame seeds, and serve hot.
