Step-by-Step Instructions for Pumpkin Chili
- In a large Dutch oven, heat 2 tablespoons of olive oil over medium heat for about 2 minutes until shimmering.
- Add 1 pound of ground spicy Italian sausage, breaking it up with a spatula. Cook for about 8–10 minutes, until nicely browned, then transfer to a plate and set aside.
- With the remaining oil in the pot, add 1 diced onion and 1 chopped red bell pepper. Sauté for 10–12 minutes until the onion is translucent.
- Add 4 minced garlic cloves, 1 teaspoon of ground cumin, 2 tablespoons of chili powder, and a pinch of kosher salt and pepper. Stir and cook for 30 seconds.
- Incorporate 2 cans of fire-roasted tomatoes, 1 can each of kidney beans and black beans, and 1 can of pumpkin puree. Pour in 2.5 cups of chicken broth and return the reserved sausage.
- Increase the heat and bring the chili to a boil, then reduce to medium-low and simmer uncovered for about 20 minutes.
- Taste and adjust seasoning if necessary; serve hot.
