Step-by-Step Instructions
  1. In a mixing bowl, combine the shredded chicken, salsa, and taco seasoning until evenly coated. Place the mixture in a microwave-safe dish and heat for 1-2 minutes, stirring halfway through, until warm.
  2. In a separate bowl or blender, combine the cottage cheese, diced cherry tomatoes, taco seasoning, and pickled jalapeños. Blend until smooth for a creamy dip, or stir by hand for chunkier texture.
  3. Sprinkle the grated cheese on top of the cottage cheese dip and microwave for 1 minute, stirring halfway through until cheese melts evenly.
  4. In a serving bowl, layer the cottage cheese dip at the bottom. Spoon the warm taco chicken mixture on top, followed by diced tomatoes, cilantro, and more grated cheese if desired.
  5. Finish by sprinkling Tajin over the top and serve alongside tortilla chips.
