For the Salad
  • 1 can black beans drained
  • 1/2 cup red onion finely chopped
  • 1 cup corn kernels fresh, frozen, or canned
  • 1 cup cherry tomatoes quartered
  • 1 can black-eyed peas drained
  • 1 medium bell pepper orange, diced
  • 1 medium avocado diced
For Serving
  • 1 bag tortilla chips or pita chips

Step-by-Step Instructions
  1. In a small bowl, whisk together 1/4 cup of extra-virgin olive oil, the juice of 2 limes, 1/4 cup of chopped fresh cilantro, 1-2 tablespoons of hot sauce, 1 teaspoon of cumin, and 1 teaspoon of kosher salt.
  2. Finely chop 1/2 of a red onion, quarter 1 cup of cherry tomatoes, dice 1 bell pepper (orange), and cut 1 ripe avocado into pieces.
  3. In a large bowl, combine 1 can of drained black beans, 1 cup of corn kernels, and 1 can of drained black-eyed peas. Add the chopped vegetables and the dressing.
  4. Gently toss all ingredients together until well-combined, ensuring the dressing evenly coats each ingredient.
  5. Transfer your cowboy caviar into a serving bowl and serve immediately with tortilla chips.
