  • 1 cup heavy cream can substitute with coconut cream
  • 3 medium potatoes diced, russet preferred
  • 2 medium carrots diced
  • 2 cups mixed vegetables your choice of favorites
  • 3 cups shredded chicken rotisserie chicken recommended

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and prepare a baking sheet with parchment paper.
  2. In a stand mixer, combine gluten-free flour, baking powder, kosher salt, and sugar. With the mixer running, add unsweetened milk, egg, and melted butter, mixing until a soft dough forms. Scoop dollops onto the baking sheet and brush with egg wash before pre-baking for 10 minutes.
  3. In a large pot, melt butter over medium heat. Add diced onion and sauté until soft. Sprinkle in gluten-free flour and whisk for a minute, then gradually stir in chicken stock and heavy cream.
  4. Add diced potatoes, carrots, and mixed vegetables to the mixture. Cook for about 10 minutes until tender. Stir in shredded chicken until well combined.
  5. Pour the filling into a baking dish and arrange the pre-baked biscuits on top. Bake for 20-25 minutes until biscuits are golden and filling is bubbling.
