- In a food processor, blend together 2 tablespoons of red curry paste, 1 tablespoon of brown sugar, 2 cloves of garlic, 2 tablespoons of chopped cilantro, 1 chopped red bell pepper, 1 chopped onion, 2 tablespoons of minced ginger, and 1 red chili until you form a smooth paste.
- Transfer the flavor base to a slow cooker and add 4 cups of chicken stock and 1½ pounds of cubed chicken breasts. Stir until everything is well combined. Set the slow cooker to HIGH and cover, cooking for 4 hours, or on LOW for 8 hours.
- Once the cooking time is complete, carefully remove the chicken pieces from the slow cooker. Using two forks, shred the chicken into bite-sized pieces and return it to the soup. Next, stir in a can of coconut milk and 7 ounces of rice noodles.
- After the noodles are cooked, add 1 cup of frozen peas, the zest and juice of 1 lime, 2 tablespoons of soy sauce, and 2 tablespoons of fish sauce. Mix well to incorporate all the ingredients.
- Ladle the soup into warm bowls, garnishing each with fresh cilantro, sliced green onions, and extra red chili if desired.
