Step-by-Step Instructions
  1. In a food processor, blend together 2 tablespoons of red curry paste, 1 tablespoon of brown sugar, 2 cloves of garlic, 2 tablespoons of chopped cilantro, 1 chopped red bell pepper, 1 chopped onion, 2 tablespoons of minced ginger, and 1 red chili until you form a smooth paste.
  2. Transfer the flavor base to a slow cooker and add 4 cups of chicken stock and 1½ pounds of cubed chicken breasts. Stir until everything is well combined. Set the slow cooker to HIGH and cover, cooking for 4 hours, or on LOW for 8 hours.
  3. Once the cooking time is complete, carefully remove the chicken pieces from the slow cooker. Using two forks, shred the chicken into bite-sized pieces and return it to the soup. Next, stir in a can of coconut milk and 7 ounces of rice noodles.
  4. After the noodles are cooked, add 1 cup of frozen peas, the zest and juice of 1 lime, 2 tablespoons of soy sauce, and 2 tablespoons of fish sauce. Mix well to incorporate all the ingredients.
  5. Ladle the soup into warm bowls, garnishing each with fresh cilantro, sliced green onions, and extra red chili if desired.
