Method
 

Step-by-Step Instructions
  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Roll out the thawed puff pastry on a lightly floured surface until about ¼ inch thick and transfer to the prepared baking sheet.
  3. In a skillet, cook diced pancetta over medium heat for 3-5 minutes until crispy and golden brown, then transfer to a paper towel-lined plate.
  4. Spread a layer of cranberry sauce on the pastry, leaving a border, then add slices of Brie and sprinkle crispy pancetta on top.
  5. Fold the edges of the pastry over the filling and brush with beaten egg for a golden finish.
  6. Bake for 20-25 minutes until the pastry is puffed and golden brown.
  7. Allow to cool slightly before garnishing with fresh thyme sprigs and serving.
