  • 1 cup Heavy Cream Can substitute with half-and-half
  • 1 cup Parmesan Cheese Freshly grated preferred
  • 2 tbsp Tomato Paste Essential for richness
For the Finish
  • 1 tbsp Butter Can substitute with olive oil for dairy-free
  • 2 tbsp Parsley Freshly chopped for garnish

Method
 

Cooking Steps
  1. Fill a large pot with salted water and bring to a boil. Add penne pasta and cook according to package instructions, about 10-12 minutes, until al dente.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add sliced smoked sausage and brown for 5-7 minutes until golden.
  3. Add 1 diced onion to the skillet and sauté for 3-4 minutes until softened. Add 3 minced garlic cloves and stir until fragrant, about 30 seconds.
  4. Stir in 2 tablespoons of Cajun seasoning, 1 teaspoon of smoked paprika, and black pepper to taste. Cook for 1 minute. Then mix in 1 tablespoon of tomato paste.
  5. Pour in 1 cup of chicken broth and 1 cup of heavy cream, stir gently, and bring to a simmer for 2-3 minutes to thicken slightly.
  6. Lower heat to medium-low, gradually stir in 1 cup of Parmesan cheese until melted. Add reserved pasta water if needed for consistency.
  7. Add browned sausage and cooked penne pasta to the skillet. Toss for 2 minutes to coat the pasta with the sauce.
  8. Let simmer over low heat for another 2-3 minutes and garnish with freshly chopped parsley before serving.
