Step-by-Step Instructions
  1. Pre-boil the chopped carrots for about 5 minutes until just tender, then set aside.
  2. Sauté chopped red onion in melted coconut oil for 4-5 minutes until soft and translucent.
  3. Add minced garlic and cook for 1 minute until fragrant.
  4. Stir in shredded rotisserie chicken and chopped red bell pepper; mix in turmeric and sweet paprika, cooking for 3-4 minutes.
  5. Add pre-boiled carrots and mild hot sauce, mixing together for another 2-3 minutes.
  6. Pour in coconut milk and warm water/broth, bringing to a gentle simmer for 5 minutes.
