  • 8 oz Noodles spaghetti, Chinese egg noodles, or rice noodles
For the Peanut Sauce
  • 1/2 cup Peanut Butter or almond butter
  • 3 tablespoons Soy Sauce or tamari for gluten-free
  • 2 tablespoons Rice Vinegar
  • 1 tablespoon Honey or maple syrup for vegan
  • 1 tablespoon Sesame Oil
  • 2 cloves Garlic minced
  • 1 teaspoon Ginger grated
For the Garnish
  • 2 tablespoons Sesame Seeds toasted

Method
 

Cooking Instructions
  1. Bring a large pot of salted water to a boil. Add noodles and cook according to package instructions, around 8-10 minutes. Drain and rinse under cold water for 1-2 minutes.
  2. In a mixing bowl, combine peanut butter, soy sauce, rice vinegar, honey, sesame oil, minced garlic, and grated ginger. Whisk until smooth, adding warm water if necessary.
  3. Transfer cooled noodles to a mixing bowl. Pour peanut sauce over noodles and toss gently to coat.
  4. In a dry skillet over medium heat, toast sesame seeds for 3-5 minutes until golden. Remove from heat and cool slightly.
  5. Serve noodles on a platter, garnishing with toasted sesame seeds and optional fresh herbs. Enjoy chilled or at room temperature.
