Method

Prepare Chicken
  1. Start by shredding 2 cups of rotisserie chicken, ensuring to remove the skin for a healthier option.
  2. If you prefer baked chicken, season chicken breasts to your liking and bake at 375°F until cooked through, around 25–30 minutes.
  3. Once cooled, shred the chicken using two forks and set it aside to be mixed into the creamy cottage cheese Buffalo chicken dip.
Blend Cottage Cheese
  1. In a blender or food processor, add 1 cup of cottage cheese. Blend on medium speed for 60 to 90 seconds until the mixture is completely smooth.
Combine Ingredients
  1. In a large bowl, mix together the shredded chicken, smooth cottage cheese, ½ cup of Greek yogurt or sour cream, ⅓ cup of Buffalo sauce, ½ teaspoon of garlic powder, ½ teaspoon of onion powder, and ½ teaspoon of smoked paprika.
  2. Stir well until fully combined, ensuring each ingredient is evenly distributed.
Bake Dip
  1. For a warm version of this dip, preheat your oven to 375°F.
  2. Grease a 9x9 inch baking dish, and spread your chicken mixture evenly within.
  3. Sprinkle 1 cup of shredded cheese on top, then place the dish in the oven.
  4. Bake for 15 to 20 minutes, or until the cheese is bubbling and golden.
Serve
  1. Once baked, remove the dip from the oven and garnish it with chopped green onions and optional blue cheese crumbles.
  2. Allow the dip to cool slightly before serving, or chill it for at least 30 minutes.
