Prepare Chicken
- Start by shredding 2 cups of rotisserie chicken, ensuring to remove the skin for a healthier option.
- If you prefer baked chicken, season chicken breasts to your liking and bake at 375°F until cooked through, around 25–30 minutes.
- Once cooled, shred the chicken using two forks and set it aside to be mixed into the creamy cottage cheese Buffalo chicken dip.
Blend Cottage Cheese
- In a blender or food processor, add 1 cup of cottage cheese. Blend on medium speed for 60 to 90 seconds until the mixture is completely smooth.
Combine Ingredients
- In a large bowl, mix together the shredded chicken, smooth cottage cheese, ½ cup of Greek yogurt or sour cream, ⅓ cup of Buffalo sauce, ½ teaspoon of garlic powder, ½ teaspoon of onion powder, and ½ teaspoon of smoked paprika.
- Stir well until fully combined, ensuring each ingredient is evenly distributed.
Bake Dip
- For a warm version of this dip, preheat your oven to 375°F.
- Grease a 9x9 inch baking dish, and spread your chicken mixture evenly within.
- Sprinkle 1 cup of shredded cheese on top, then place the dish in the oven.
- Bake for 15 to 20 minutes, or until the cheese is bubbling and golden.
Serve
- Once baked, remove the dip from the oven and garnish it with chopped green onions and optional blue cheese crumbles.
- Allow the dip to cool slightly before serving, or chill it for at least 30 minutes.
