Cooking Instructions
  1. Begin by heating a skillet over medium heat. Add diced onions and minced garlic, sautéing for about 5-7 minutes until they soften and become fragrant.
  2. In your crockpot, add the sautéed onions and garlic along with crushed tomatoes, vegetable broth, coconut milk, and Italian herbs. Stir everything together.
  3. Cover your crockpot and cook on low for 6-8 hours or on high for 3-4 hours.
  4. About 10 minutes before the cooking time ends, add the fresh spinach to the crockpot and stir gently.
  5. If you prefer a creamier texture, use an immersion blender to blend part or all of the soup directly in the crockpot for about 1-2 minutes.
  6. Taste the soup and adjust seasoning with salt, pepper, and additional herbs if desired. Serve warm.
