- Begin by heating a skillet over medium heat. Add diced onions and minced garlic, sautéing for about 5-7 minutes until they soften and become fragrant.
- In your crockpot, add the sautéed onions and garlic along with crushed tomatoes, vegetable broth, coconut milk, and Italian herbs. Stir everything together.
- Cover your crockpot and cook on low for 6-8 hours or on high for 3-4 hours.
- About 10 minutes before the cooking time ends, add the fresh spinach to the crockpot and stir gently.
- If you prefer a creamier texture, use an immersion blender to blend part or all of the soup directly in the crockpot for about 1-2 minutes.
- Taste the soup and adjust seasoning with salt, pepper, and additional herbs if desired. Serve warm.
