  • 8 ounces whole grain pasta
For the Broccoli
  • 2 cups fresh broccoli florets
For the Cheese Sauce
  • 1 cup Mozzarella cheese, grated can also use Gouda
  • 1 cup milk dairy or plant-based
  • 2 tablespoons butter or olive oil
For Seasoning
  • 1 teaspoon salt adjust to taste
  • 1/2 teaspoon black pepper adjust to taste

Method
 

Step-by-Step Instructions
  1. Chop the broccoli into bite-sized florets. Measure out your pasta.
  2. Bring 4-6 cups of water to a boil in a large pot. Add salt and the pasta, cooking until al dente, about 8-10 minutes. Add the broccoli 2-3 minutes before the pasta is done.
  3. Drain the pasta and broccoli in a colander and return to the pot over low heat. Add the butter and let it melt.
  4. Stir in the grated cheese and milk, keeping the heat low to create a smooth sauce. Season with salt and pepper to taste.
  5. Mix thoroughly until the pasta and broccoli are coated. If too thick, add more milk to adjust consistency.
  6. Serve immediately, optionally garnishing with extra cheese or pepper.
