Directions
  1. Cube the chicken breasts, marinate in olive oil, salt, pepper, garlic powder, onion powder, and paprika.
  2. In a pot, heat olive oil and brown the chicken for 6-7 minutes, then set aside.
  3. Sauté onion, garlic, and red bell pepper for 4-5 minutes until fragrant.
  4. Add cremini mushrooms and continue cooking for 3-4 minutes.
  5. Pour in chicken broth, diced tomatoes, and Rotel, then add seasoning. Simmer for 10 minutes.
  6. Return chicken to the pot and simmer for 15-20 minutes.
  7. Add spinach and cooked pasta, then stir in heavy cream and Parmesan. Heat through for 5 minutes.
  8. Serve hot with fresh basil and crusty bread.
