Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Pat the chicken dry and season with salt, pepper, and smoked paprika.
  3. In a skillet, heat olive oil and sear chicken for 5-6 minutes until golden brown.
  4. Roast the chicken in the oven for 20-25 minutes until cooked through.
  5. Melt butter in another saucepan, sauté onions and garlic until translucent.
  6. Stir in thyme, red pepper flakes, and flour, cooking for about 1 minute.
  7. Whisk in chicken broth and cook until thickened, about 3-5 minutes.
  8. Lower heat, stir in cream, tomato paste, and Dijon mustard; simmer for 5-6 minutes.
  9. Combine cooked chicken with the sauce and simmer for 2-3 minutes.
  10. Serve chicken over rice, garnished with parsley.
