Step-by-Step Instructions
  1. Bring a large pot of salted water to a boil. Add pasta and cook until al dente, about 8-10 minutes. Drain and reserve a cup of pasta water.
  2. Heat olive oil in a skillet over medium heat and sauté minced garlic for 1 minute. Add mixed vegetables and sauté for 5-7 minutes.
  3. Reduce heat and pour in heavy cream. Gradually add Parmesan cheese, stirring until melted and creamy. Add lemon juice and zest.
  4. Add drained pasta to the skillet and toss to combine with the sauce. Add reserved pasta water if sauce is too thick.
  5. Season with salt and pepper to taste. Serve warm, garnished with herbs if desired.
