For the Herby Ranch Sauce
  • 1 cup Herby Ranch Sauce can use yogurt and herbs for a lighter option
For the Drizzle
  • 2 tbsp Olive Oil can use any neutral oil as a substitute

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Pat the chicken dry with paper towels and season both sides with salt and pepper. Place in the center of a greased baking sheet.
  3. Chop bell peppers and red onion, arranging them around the chicken on the baking sheet.
  4. Drizzle olive oil over the chicken and veggies, tossing them to coat evenly.
  5. Roast in the oven for about 15-20 minutes until the chicken reaches an internal temperature of 165°F (74°C).
  6. Whisk together Herby Ranch Sauce ingredients in a bowl.
  7. Once cooked, slice the chicken and assemble the pitas with chicken, roasted veggies, and Herby Ranch Sauce.
  8. Serve the filled pitas on a platter and enjoy!
