  • 4 tablespoons Butter Melted
For the Filling
  • 1 cup Cheese Sharp cheddar or Pepper Jack, shredded
  • 6 slices Bacon Cooked and crumbled
  • 1/4 cup Green Onions Chopped, can substitute with chives
  • 1/2 cup Sour Cream Or Greek yogurt
For Serving
  • to taste Hot Sauce

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C) and prepare your baking tray by lining it with aluminum foil.
  2. Scrub the potatoes clean and place them directly on the oven rack. Bake for 40-60 minutes or until tender.
  3. Slice each baked potato in half horizontally and scoop out the flesh, leaving a quarter-inch layer.
  4. Brush the insides of the potato skins with melted butter and season with salt and pepper. Bake for 15 minutes until golden and crispy.
  5. Remove the crispy potato skins from the oven, fill them with cheese and bacon, and bake again for 5-7 minutes until cheese is melted.
  6. Top each potato skin with green onions and sour cream, then serve warm.
