Step-by-Step Instructions

  2. Wash and dry the baby potatoes, then halve or quarter them. Toss with olive oil, salt, black pepper, and garlic powder.
  3. Spread the seasoned potatoes on a baking sheet and roast for 35-40 minutes, flipping halfway through.
  4. Combine gochujang, honey or maple syrup, rice vinegar, soy sauce or tamari, sesame oil, and optional mayonnaise or yogurt in a small bowl. Stir in minced garlic and grated ginger.
  5. Combine the roasted potatoes with the dressing, add chopped green onions and sliced cucumbers, and mix gently.
  6. Serve warm, or refrigerate for a chilled option. Garnish with toasted sesame seeds and crispy shallots or peanuts.
