Step‑by‑Step Instructions
  1. Preheat the oven to 425°F (220°C) and prepare the baking sheet.
  2. Combine halved Brussels sprouts and batoned carrots with melted coconut oil in a large mixing bowl.
  3. Add smoked paprika, garlic powder, ground coriander, salt, and black pepper. Toss to coat evenly.
  4. Spread the vegetables on the baking sheet in a single layer and roast for 20–25 minutes, stirring halfway through.
  5. Drizzle roasted vegetables with maple syrup and toss to coat.
  6. Return to the oven for an additional 5 minutes to caramelize.
  7. Remove from oven, let cool for a minute, and serve warm.
