Step‑by‑Step Instructions
  1. In a large mixing bowl, combine your drained corn, all-purpose flour, egg, chili powder, lime juice, and salt. Stir gently until all ingredients are combined into a thick batter. Set this aside.
  2. Place a cast iron skillet over medium heat and add enough oil to cover the bottom. Heat the oil for about 5 minutes until shimmering.
  3. Using a tablespoon, scoop the batter into the hot oil, pressing down gently to flatten each fritter. Fry for 3-4 minutes on each side until golden brown and crispy.
  4. Once crispy, carefully remove the fritters and place them on a plate lined with paper towels to drain excess oil.
