Method
 

Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C).
  2. Place quartered Baby Gold Potatoes into a large pot and cover them with cold water. Bring the water to a boil, then reduce the heat and simmer for 10-12 minutes until tender but firm.
  3. Drain the potatoes in a colander and allow them to steam for about 5 minutes.
  4. Sprinkle in salt and pepper in the colander and gently shake to coat the potatoes evenly.
  5. Pour avocado oil onto a baking sheet and heat it in the oven for about 10 minutes.
