Step‑by‑Step Instructions
  1. Start by bringing a large pot of salted water to a rolling boil. Carefully add your peeled and chopped carrots, ensuring they’re fully submerged. Boil them for about 10–12 minutes until they are fork-tender but not mushy.
  2. Once boiled, drain the carrots in a colander and let them cool for a few minutes. Gently smash each carrot to about half an inch thick.
  3. In a medium bowl, combine garlic powder, smoked paprika, salt, pepper, and grated Parmesan cheese. Mix well until all the ingredients are evenly distributed.
  4. Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper. Arrange the smashed carrots on the tray in a single layer and sprinkle the seasoning mixture generously over them.
  5. Roast in the hot oven for about 20 minutes, or until they turn golden and crispy, with beautifully caramelized edges.
  6. Once roasted, remove the tray from the oven and allow the Crispy Smashed Carrots Bites to cool for a minute. Transfer them to a serving platter and enjoy them hot.
