- Start by bringing a large pot of salted water to a rolling boil. Carefully add your peeled and chopped carrots, ensuring they’re fully submerged. Boil them for about 10–12 minutes until they are fork-tender but not mushy.
- Once boiled, drain the carrots in a colander and let them cool for a few minutes. Gently smash each carrot to about half an inch thick.
- In a medium bowl, combine garlic powder, smoked paprika, salt, pepper, and grated Parmesan cheese. Mix well until all the ingredients are evenly distributed.
- Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper. Arrange the smashed carrots on the tray in a single layer and sprinkle the seasoning mixture generously over them.
- Roast in the hot oven for about 20 minutes, or until they turn golden and crispy, with beautifully caramelized edges.
