- Begin by microwaving the microwave-ready little potatoes according to the package directions, usually about 6–8 minutes.
- Transfer the cooked potatoes to a clean plate or cutting board. Using the bottom of a sturdy glass or a flat utensil, gently smash each potato until they are about half an inch thick.
- Drizzle the smashed potatoes with canola oil, ensuring an even coating across each one. Sprinkle salt and pepper over the tops.
- Preheat your oven to 425°F (220°C). Arrange the smashed potatoes on a baking sheet lined with parchment paper and bake for about 20 minutes or until golden brown and crispy.
- Once the potatoes are crispy, spread a layer of pizza sauce over each smashed potato, followed by your desired toppings and shredded mozzarella cheese.
- Return the assembled pizzas to the oven and bake for an additional 5–7 minutes, or until the cheese is melted and bubbly.
