Cooking Instructions
  1. Begin by microwaving the microwave-ready little potatoes according to the package directions, usually about 6–8 minutes.
  2. Transfer the cooked potatoes to a clean plate or cutting board. Using the bottom of a sturdy glass or a flat utensil, gently smash each potato until they are about half an inch thick.
  3. Drizzle the smashed potatoes with canola oil, ensuring an even coating across each one. Sprinkle salt and pepper over the tops.
  4. Preheat your oven to 425°F (220°C). Arrange the smashed potatoes on a baking sheet lined with parchment paper and bake for about 20 minutes or until golden brown and crispy.
  5. Once the potatoes are crispy, spread a layer of pizza sauce over each smashed potato, followed by your desired toppings and shredded mozzarella cheese.
  6. Return the assembled pizzas to the oven and bake for an additional 5–7 minutes, or until the cheese is melted and bubbly.
  7. Remove the baking sheet from the oven, let cool momentarily, then slice into pieces, serve warm, and enjoy!
