  • 3 tablespoons Fish Sauce or soy sauce for vegetarian
  • 1 tablespoon Sugar brown sugar preferred
  • 1 teaspoon Black Pepper fresh cracked

Cooking Instructions
  1. Begin by trimming any excess fat from your chicken thighs and patting them dry with a paper towel.
  2. Combine minced lemongrass, garlic, fish sauce, sugar, and black pepper to create a marinade.
  3. Coat each chicken thigh thoroughly in the marinade and let marinate for at least 30 minutes.
  4. Heat enough oil in a skillet over medium-high heat until shimmering.
  5. Carefully add the marinated chicken thighs into the hot oil and cook each side for about 5–7 minutes until golden brown.
  6. Transfer the cooked chicken to a plate lined with paper towels and allow it to rest for a few minutes.
