Zucchini Fritters Ingredients
  • 2 to 3 medium zucchinis Zucchini Salt and drain to remove excess moisture.
  • 1 medium Shallot Use green onions or a small onion as a substitute if needed.
  • 2 large Eggs Flax eggs can be used as a vegan substitute.
  • 1 cup Almond Flour Coconut flour can be used but start with less.
  • 1 cup Goat Cheese Feta or omit for a dairy-free option.
  • to taste Kosher Salt
  • to taste Black Pepper
  • 3 tablespoons Extra-Virgin Olive Oil For frying.
Garlic Chive Yogurt Sauce
  • 1 cup Plain Yogurt Greek yogurt for thicker consistency or dairy-free options.
  • 2 cloves Garlic Use garlic powder if fresh is unavailable.
  • to taste Chives Can substitute with green onions or omit.

Method
 

Preparation Instructions
  1. Grate about 2 to 3 medium zucchinis into a large mixing bowl. Sprinkle a pinch of kosher salt and let sit for 20 minutes to draw out moisture.
  2. Use a nut milk bag or cheesecloth to squeeze out excess liquid from the grated zucchini thoroughly.
  3. To the drained zucchini, add finely chopped shallot, 2 large eggs, 1 cup of almond flour, crumbled goat cheese, and black pepper. Mix until well combined.
  4. Heat 3 tablespoons of olive oil in a skillet. Dollop about 1/4 cup of the mixture into the pan and flatten. Fry for 3-4 minutes on each side until golden brown.
  5. In a bowl, combine 1 cup of yogurt, 2 minced garlic cloves, chives, and salt and pepper. Stir until creamy.
  6. Plate the fritters and top with garlic chive yogurt sauce. Serve warm.

Notes
