- Grate about 2 to 3 medium zucchinis into a large mixing bowl. Sprinkle a pinch of kosher salt and let sit for 20 minutes to draw out moisture.
- Use a nut milk bag or cheesecloth to squeeze out excess liquid from the grated zucchini thoroughly.
- To the drained zucchini, add finely chopped shallot, 2 large eggs, 1 cup of almond flour, crumbled goat cheese, and black pepper. Mix until well combined.
- Heat 3 tablespoons of olive oil in a skillet. Dollop about 1/4 cup of the mixture into the pan and flatten. Fry for 3-4 minutes on each side until golden brown.
- In a bowl, combine 1 cup of yogurt, 2 minced garlic cloves, chives, and salt and pepper. Stir until creamy.
- Plate the fritters and top with garlic chive yogurt sauce. Serve warm.
