Step‑by‑Step Instructions
  1. Sear the beef in a skillet over medium-high heat, seasoning with salt and pepper for about 3-4 minutes on each side.
  2. Prepare the ingredients by chopping chipotle peppers and cilantro, mixing cumin, garlic powder, onion powder, and salt and pepper.
  3. Combine everything in the crockpot, layering seared chuck roast, chopped cilantro, chipotle, and beef broth with the seasoning mixture.
  4. Set the crockpot to low for 8 hours or high for 4 hours.
  5. Shred the beef directly in the crockpot using two forks.
  6. Add lime juice and adjust seasoning as needed.
  7. Serve over cauliflower rice or inside lettuce wraps with optional toppings.
