Step-by-Step Instructions
  1. Prepare the Slow Cooker by spraying it with non-stick spray or using a liner.
  2. Add the boneless chicken breasts to the slow cooker, spreading them evenly.
  3. Pour the sweet chili sauce over the chicken, ensuring each piece is covered.
  4. Add the soy sauce and garlic, stirring gently to combine the flavors.
  5. Grate and sprinkle fresh ginger on top of the chicken mixture.
  6. If using, add chopped bell peppers on top of the chicken.
  7. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  8. Once done, shred the chicken in the slow cooker and serve over cooked rice, garnished with cilantro.
