  • 2 large Carrots peeled and grated
  • 2 medium Apples cored and diced, preferably Granny Smith or Honeycrisp
  • 1 cup Red Cabbage finely shredded
  • ½ cup Dried Fruit raisins or cranberries
  • ½ cup Nuts walnuts or pecans, chopped
  • ¼ cup Parsley chopped
For the Creamy Citrus Dressing
  • ½ cup Plain Greek Yogurt
  • 3 tablespoons Mayonnaise
  • ¼ cup Fresh Orange Juice
  • 2 tablespoons Lemon Juice
  • 1 tablespoon Honey
  • to taste Salt
  • to taste Pepper

Method
 

Preparation Steps
  1. Grate about two large carrots into a large mixing bowl.
  2. Core and dice two crisp apples, and add them to the bowl immediately.
  3. Finely shred a few leaves of red cabbage and incorporate them into the bowl along with a handful of dried fruits and chopped parsley.
  4. In a separate bowl, whisk together the Greek yogurt, mayonnaise, orange juice, lemon juice, honey, and a pinch of salt and pepper to make the dressing.
  5. Pour the creamy citrus dressing over the salad mixture and gently toss together.
  6. Taste the salad and adjust the seasoning as needed.
  7. Cover the salad and let it rest in the refrigerator for about 15 minutes.
  8. When ready to serve, give the salad a gentle toss and garnish it with additional nuts or parsley.
