For the Crunch
  • 1/2 cup Crunchy Seeds (Sunflower/Pumpkin) Nuts can be swapped based on preference.
For the Dressing
  • 1/4 cup Zesty Citrus Vinaigrette Balsamic vinegar can be used for variation.

Method
 

Marinating and Cooking
  1. Mix your favorite herbs with olive oil to create a marinade. Coat the chicken breast and let it marinate for at least 15 minutes.
  2. Preheat your oven to 400°F (200°C) and prepare sweet potatoes by peeling, dicing into uniform cubes, and drizzling with olive oil, seasoning with salt and pepper. Roast for about 25 minutes.
  3. Grill the marinated chicken over medium heat for 6-7 minutes on each side or until cooked through.
Assembling the Salad
  1. In a large bowl, combine mixed greens, roasted sweet potatoes, and citrus segments.
  2. Sprinkle the salad with crunchy seeds and drizzle with vinaigrette just before serving.
