  • 1 tsp Paprika smoked paprika can give a lovely twist

  • 32 oz Frozen Tater Tots choose gluten-free or make homemade tots

Preparation Steps
  1. Preheat your oven to 425°F (220°C) to ensure crispy tater tots.
  2. In a large skillet over medium heat, add your choice of ground turkey or beef and cook for about 5-7 minutes until browned.
  3. Add chopped onion and minced garlic to the skillet, sauté for 3-4 minutes until onion is translucent.
  4. Introduce diced red bell pepper, frozen corn, and mixed vegetables, along with coconut milk, thyme, paprika, salt, and pepper. Stir for 5-7 minutes.
  5. Transfer the filling mixture to a 9x13 inch baking dish, spreading it evenly with a spatula.
  6. Arrange frozen tater tots in a single layer on top of the filling.
  7. Bake in the preheated oven for 25-30 minutes until tater tots are golden brown.
  8. Let the casserole cool for a few minutes before serving to allow layers to set.
