Method
 

Cooking Instructions
  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat over medium heat and add your ground beef. Brown for about 5-7 minutes, breaking it up as it cooks. Add diced onion and bell peppers, and sauté for an additional 3-4 minutes until soft. Season with chili powder, cumin, salt, and pepper.
  3. In a separate bowl, crack open your eggs and whisk them vigorously with a pinch of salt and pepper until well combined.
  4. Arrange corn tortillas in a baking dish. Spoon the beef and vegetable mixture into each tortilla, pour the egg mixture over, and sprinkle shredded cheddar cheese on top.
